I’m the purchasing agent at the casino.
I buy all of the food.
Guess I’m more interested to know what other purchasers % averages or what their target % is.

I had a friend who was a Purchasing Agent and she belonged to a Professional Organization for Procurement Managers. I would think someone in that type of club could answer your question better than I could.

   Percent of what? Total Hotel bill? Percent of total food paid for during a trip? Can you be a bit more specific ??

   yeah i’m confused.
   i guess it should be whatever you want.

   don’t the restaurants take care of that themselves?
   and shouldn’t you know all of that, being as its your job?
   i would assume you have all of the numbers of what gets sold and what sells well and maybe you should base it off of that.
